Lemon, Pear and Ginger Loaf Cake
Ingredients:
Cake ~
125g - butter
1tsp - vanilla extract
2 1/2tsp - ginger
165g - brown sugar
225g - self raising flour
2 - eggs
1-2 - pears (ripe)
100ml - milk
Drizzle~
85g - sugar
1 - lemon (juice/rind)
Make it
Preheat oven to 180°c and line a loaf tin
Cream butter and sugar
Beat the eggs and slowly add to the mix
Add the vanilla extract
Sieve in the flour and ginger
Peal, chop and then fold in the pears
Add milk if needed
Put in the oven for 50-60 minutes
Mix sugar, lemon juice and rind to create the drizzle
Poke holes in the top when it comes out of the oven and pour on the drizzle
Let it cool
Eat
