Lemon, Pear and Ginger Loaf Cake

Ingredients:

Cake ~

  • 125g - butter

  • 1tsp - vanilla extract

  • 2 1/2tsp - ginger

  • 165g - brown sugar

  • 225g - self raising flour

  • 2 - eggs

  • 1-2 - pears (ripe)

  • 100ml - milk

Drizzle~

  • 85g - sugar

  • 1 - lemon (juice/rind)

Make it

  1. Preheat oven to 180°c and line a loaf tin

  2. Cream butter and sugar

  3. Beat the eggs and slowly add to the mix

  4. Add the vanilla extract

  5. Sieve in the flour and ginger

  6. Peal, chop and then fold in the pears

  7. Add milk if needed

  8. Put in the oven for 50-60 minutes

  9. Mix sugar, lemon juice and rind to create the drizzle

  10. Poke holes in the top when it comes out of the oven and pour on the drizzle

  11. Let it cool

  12. Eat
